Dark Chocolate Protein Muffins

This recipe brought to you by Protein Pow(d)er. Please visit the website for more fantastic recipes made with protein powder.

Ingredients

Blended together and baked in 8 muffin cases for approximately 45 minutes at 170 C (338 F):

  • 1/2 cup of liquid egg whites
  • 1/2 cup of goji berries
  • 1/2 cup of quinoa flakes
  • 1/2 cup of chocolate hemp protein powder
  • 1/4 cup of blueberry & apple puree for babies
  • 3 tbsp of chestnut flour
  • 3 tbsp of cocoa powder
  • 1 tsp of baking soda

Nutritional Profile

Per 1 muffin (out of 8):

  • Calories: 108
  • Protein: 13g
  • Carbs: 8g (34.9g sugars)
  • Fat: 2.8g (0.2g sat)
  • Fiber: 3.8g

This is particularly useful if you don’t see a best before date or you’ve just passed it (most eggs are fine up to a week past their date, sometimes longer).

Cauliflower crust

As some of you have been asking for the cauliflower crust recipe, I decided to write it down; I hope this helps.

1) These are the ingredients I used: cauliflower, eggs, carrots and parsley. Of course you can skip the carrots or the parsley or even add other things.
2) Shred the cauliflower, watch out for your fingers, it might hurt a little.
3) Shred your carrots and add them.
4) Cut the parsley to tiny pieces, add eggs, salt and pepper.
5) Mix everything well!
6) Get your pan and heat up some oil – I used olive oil.
7) Fill the mixture inside of the pan, disperse it a little and put the top back on the pan.
8) Wait about 8 minutes. As long as your cauliflower crust roasts, you can make a nice cup of tea and cut all other ingre
dients that you want to put on top of your crust, be creative, everything is possible and absolutely delicious!

9) Flip your crust -  It might be difficult and about to break – try to use a plate to flip it. Once you’ve managed this, let it roast on the other side for some more minutes.
10) Now decorate it with anything you want and enjoy this healthy heaven!

Even if you’re not vegan or vegetarian, it’s still good to get your protein from a bunch of different foods- you don’t just have to stick to meat to get protein! :)

I personally don’t eat meat or dairy BUT you can still use these same rules for a vegan diet! Eating good clean food is the best way to fuel your body and keep your engine running at peek performance!

I’ve seen a lot of comments about cutting out the rice, and flour. It doesn’t mean to NOT eat them it just means if your going to have rice have brown rice or brown flour. :)
